We fell in LOVE with coconut syrup in Hawaii years ago, and this was my attempt to recreate it! IT IS SOOOO GOOD!
It needs to be refrigerated, and will get quite thick, we usually stick our jar in the microwave for a few seconds! (don't leave it in too long, runny syrup leads to soggy pancakes)
If you are NOT a coconut lover like me, you could use regular buttermilk, and vanilla extract, or lemon extract, etc...
